2 cups water

1 tablespoon chopped almonds

½ cup sugar

1 tablespoon chopped cashew nuts

¹/8 teaspoon salt

1 tablespoon chopped raisins

1 cup white wheat flour

2 dates, chopped

1 cup semolina (soojee

2 apricots, chopped

1 tablespoon sesameseeds

½ teaspoon baking powder

oil for deep-frying

¼ teaspoon ground cardamom

1.Mix the water, sugar and salt together in a pan and bring to a boil. Remove from the heat and cool until just warm.

2.Add all the other ingredients except the baking powder, cardamom and oil. Mix well and let stand at room <E>temperature, covered, overnight. The next day stir in the baking powder and cardamom.

3.Heat the oil in a skillet or wok over moderate heat. Take 1 heaping tablespoon of the dough and drop it into the oil. <E>Fry it on all sides for about 4 minutes or until well browned. Remove and drain on paper towels. Continue with the <E>batter until all are fried. Serve warm for breakfast of any other time. Makes 20 Cakes.
